The result is alternating layers of coarse and fine textured wood, which is what gives oak its familiar strong grain pattern and what makes that pattern respond so visibly to color.
The more important difference from red oak sits inside those pores. In white oak heartwood, the pores are largely filled with tyloses, bubble-like growths that block the vessels. It is the reason white oak has long been used for barrels and other watertight vessels. Red oak's pores are typically open by comparison, which makes it more porous and absorbent. White oak is also the denser of the two species.
What that means for color absorption
White oak stains and finishes well. But its comparatively closed pore structure means it does not absorb color the way a more open species does, so a color can read differently on white oak than it does on a chip or a sample made from another wood.
The coarse and fine bands also do not accept color at the same rate. Softer earlywood absorbs more readily than the denser latewood beside it, which is why a pigmented finish on oak tends to emphasize the grain rather than even it out. Working progressively through the grits and sanding the whole surface with the same final grit helps prevent uneven color, since any area left rougher can take more color than the rest. This is the main reason a sample made on your own material, prepared with your own sanding sequence, tells you more than any photograph can.

Every wood species is photochemically sensitive, meaning its color shifts with light exposure over time. Some species change dramatically. White oak tends to change less, so this is usually a smaller factor than it would be with a species known for darkening. Under heavy sunlight, white oak can undergo slight photodegradation and lighten a little, bleaching gently rather than deepening.

That has a practical consequence people often get backwards. Because an oil finish adds warmth on its own, using less color does not necessarily mean less change.
